Recommended Temperature for Food
Meat and Poultry 33-36ºF
Fish 32-33ºF (that's why it should always be sitting directly on a bed of ice)
Shellfish: Mollusks (clams, oysters, scallops) 32-33ºF
Shellfish: Crustaceans (live lobsters & crabs) 45ºF
Eggs 38-40ºF
Dairy (butter, hard & soft cheese, milk) 38-40ºF
Fruit and vegetables 38-40ºF

*DANGER ZONE IS 45-140ºF, but the recommended temperature for Crustaceans 45ºF! That's because they're live, so they have their own ability to fight off bacteria while they're living. Any colder and they might die of the cold!

Recommended Temperatures for Cooked Food
Whole poultry: 180ºF
Poultry breast, well-done meats: 170ºF
Reheating leftovers: 165ºF
Poultry and stuffing: 165ºF
Meats medium, raw eggs, egg dishes: 160ºF
Ground beef: 155ºF
Pork: 150ºF
Beef: 140ºF
Lamb: 140ºF
Seafood: 140ºF
Rare beef: 130ºF

2. Explain the theories of house plumbing and their application in septic tank, bathrooms and kitchen water connections.

4. Explain the importance of standards of National Plumbing Code.

CARPENTRY AND MASONRY:
LET Competencies:
1. Apply the theories related to construction materials.
2. Explain the basic of wood technology and masonry.
3. Construct the different kinds of wood joints.
4. Explain the principles of mensuration and layout.
5. Apply the correct technique in using tools in both technologies.
6. Determine the proper mixing in masonry.
7. Follow proper procedure in constructing woodwork and masonry.
